Executive Chef Shaymus Alwin brings more than 20 years of extensive knowledge and experience in the restaurant and culinary industry. Alwin began his career at age 15 as a dishwasher at Seascapes Restaurant in Cape Porpoise, Maine. In 2000, he made a move to the island of O‘ahu and joined Chai’s Island Bistro. After time at Chai's and an executive chef position at Bistro Catering where he often served over 1,000 guests at events, Alwin joined the culinary team at The Royal Hawaiian, a Luxury Collection Resort, Waikiki. During his time there, Alwin received the “Best overall TASTE” Award in 2016 and the “Best Use of Ingredients” Award in 2017 at the Hawaii Food Manufacturer Association Cook Off. He is a 10-time award winner of Honolulu Magazine Hale Aina Award in Best Farm to Table and Best Seafood categories. Currently, Alwin is the Executive Chef of all G.Lion Hawaii culinary concepts at The Ritz-Carlton Residences, Waikiki Beach. resort.

Born and raised in New York City, Taro Kurobe worked in various restaurants and dreamt of becoming a chef just like his brother. After moving to Hawaii, which has always been a second home to Kurobe, he diligently worked in hospitality discovering the unique ‘Aloha’ of Hawaii through various resorts and restaurants. It was at the Halekulani hotel where he discovered the world of being a Sommelier. Kurobe had found his calling and with passing the Advanced Sommelier examination through the Court of Master Sommeliers, Americas in 2018, solidified his continuous journey in the wine world. Wine is a passion for Kurobe, but he appreciates the roots of hospitality as he states, “I feel so privileged to be able to work with it. But more than anything, it’s the people who make the world of food and wine so fantastic.”
